Honey BBQ Fire-Grilled Baby Back Ribs

If you missed the fellowship dinner--prelude to our celebration of Black History Month—you missed out on some finger-licking-good home cooking courtesy of Christopher Hunt, associate dean of student affairs. (The secret’s out—Hunt loves to cook.) Here’s his simple and simply delicious recipe for baby back ribs.

1 slab of baby back ribs (approximately 2 pounds)

Seasoned salt

Black pepper

Italian seasoning

  • Honey barbecue sauce, Sweet Baby Ray’s (preferred)
  • Wash ribs in cold water and pat dry.
  • Coat the ribs (to your own satisfaction) with seasoned salt, black pepper (light shakes), and Italian seasoning, place in a slow-cooker on low heat, and cook for approximately 5 hours (time will vary depending on the size of the slab). Check the ribs to ensure they are tender, but not quite falling off of the bone.
  • Line a charcoal or propane gas grill with aluminum foil and lightly coat with cooking spray.
  • Take the ribs out of the slow cooker and place on the grill curved side down to start. Grill for several minutes, turning occasionally (closely monitor the ribs to avoid overcooking).
  • Serve with sauce on both sides.

Enjoy!

College Campus Featured in Public Garden Magazine

As we scurry from class to class, building to building, it can be easy to take for granted the beautiful grounds we walk through every day, but our landscape and the loving attention it gets from Randy Haffling, general services manager, caught the attention of the editors of Public Garden magazine, the journal of the American Public Gardens Association. The organization’s most recent issue featured Haffling’s work in overseeing the care and cataloging of Moravian University’s impressive tree collection alongside overviews of the programs at the New England Wild Flower Society in Framingham, Massachusetts, and the Montgomery Botanical Center, in Coral Gables, Florida.

Chill

No, this is not a reference to the weather but to the soothing, healing, and mind-building power of meditation. Join the circle—the meditation circle that is--each Tuesday and Thursday at noon in Room 204 (just behind the circulation desk office) in Reeves Library for 15 to 20 minutes of mind/body renewal. A brief introduction is provided, but no experience is necessary. It’s casual and welcoming and the best 15-minute break your busy life deserves.
